Tasty Tuesday Slow Cooker Chicken Parmesan & Recipe Link Up

Hello friends and welcome to another Tasty Tuesday!  I'm so glad you're here!

A few years ago I made homemade chicken parmesan for the first time.  I fell in love with it and vowed to be true to it forever.  However it took hours to make.  I would literally start on dinner as soon as lunch was over and would be cooking until the moment dinner was on the table.  As amazing as every morsel was, I couldn't devote half of a day to a single meal.  Just no.
But this meal?  This meal should have a cape.  It's the super hero of all chicken parmesan because it combines my love without taking up my entire day.  Actually it is a perfect go-to dish to throw in the crockpot in the morning on a busy, hectic day and come home to vision of deliciousness and your mouth watering.
This is a rave folks.
I have made this recipe gluten free, so if you're gluten free feel free to use this recipe as is.  But if you're not gluten free just use your normal bread crumbs/pasta.  Either way make this dish asap!!!

Here's what you'll need...

2-4 chicken breasts, depending on size
1 Tablespoon olive oil
1 large egg, beaten
1/2 cup bread crumbs
1/2 teaspoon Italian seasoning
1/4 teaspoon pepper
1/4 teaspoon salt
1/4 cup Parmesan cheese
4 slices mozzarella cheese
Pasta sauce of your choice (I used jarred)

Start by spreading the olive oil in the bottom of the slow cooker.  Then beat the egg in a shallow dish, and combine the breadcrumbs, parmesan cheese, and spices in a separate bowl.

Now dip the chicken breasts in the egg, then the crumb mixture and place in the slow cooker.
Cover with cheese slices then pour on pasta sauce.
Cook this on high for 4 hours or on low for 6-7 hours.
The result is a moist, fall apart chicken that is insanely delicious.  Serve over your pasta of choice and enjoy!

  4. I grew up eating chicken parm. I always thought of it as a quick meal. Dip chicken breasts in egg and bread crumbs and fry. Top with sauce and cheese and put it under the broiler for a minute to melt the cheese?

    1. Diane, you're right that is a much simpler way!! The recipe I had originally used includes homemade everything-sauce, noodles, the whole show! So that's probably what lengthened my version! But your's sounds delicious too!

  10. This looks so yummy!! I haven't made chicken parmesan before because I didn't want to cook it on the stove or in the oven. I'm definitely going to give it a try. Thanks for sharing your recipe at Inspire Me Mondays!
