I've spoken often of my love for my casseroles, but I don't think I've ever mentioned how much I adore muffins. They are an easy breakfast to grab, yet you can take them to a brunch and look like a fancy-pants. I love making a big batch of them at the beginning of the week and pairing them with some fruit for breakfasts during the week, or even a little sweet something in the afternoon.
Blueberry, banana, chocolate, apple-I don't discriminate. I just love muffins.
So when I found out I was having to cut gluten out I was devastated to think of life with no muffins! But this recipe saved the day. If you aren't gluten free, feel free to substitute with any all-purpose flour. This is also a perfect "base" muffin recipe that can be easily turned into a banana, strawberry, or any kind of muffin you desire!
Here's what you'll need...
2 and 1/4 cups all purpose flour
1/2 cup brown sugar
1/2 cup sugar
1 Tablespoon baking powder
1/4 teaspoon baking soda
Pinch of salt
2 eggs
1 cup buttermilk
1/2 cup oil
1 Tablespoon vanilla extract
Chocolate chips
Start by simply combining the dry ingredients.
Then combine the wet ingredients and add them to the dry mixture.
Now fold in your chocolate chips.
Fill your cupcake liners about 2/3 full and bake at 375 for 25-27 minutes.
Get ready to enjoy!
