Hi friends and welcome to another Tasty Tuesday! I'm so glad you're here!
Breakfasts have always been a challenge for me, so back to school breakfasts were basically a struggle my whole life. I hate breakfast!
Except this one.
This breakfast casserole is the perfect mix of delicious and simple. If you can pour and stir you've got this, and you can even mix it up the night before so all you have to do the next morning is pop it in the oven. This dish is also the perfect breakfast to take to any kind of breakfast or brunch that will be a huge crowd pleaser. You can also serve this with a salad for a yummy dinner!
Make this casserole for the first day of school for a special treat that will (hopefully) even last you all week for quick leftovers breakfasts!
Here's what you'll need....
1 (32 oz.) frozen cubed hash browns
8 ounces cooked, diced ham
2 (10.75 oz.) cans cream of potato soup
1 (16 oz.) sour cream
2 cups shredded cheddar cheese
1 1/2 cups shredded parmesan cheese
Mix everything except the parmesan cheese in a large bowl.
Pour into a greased 9x13 baking dish and top with the parmesan cheese.
Bake this in a 375 degree oven for 1 hour.
