It's a fact that the Mr. and I have the greatest group of friends ever. We get together with a few other couples every week for dinner and 9 times out of 10, it's a theme night.
Dorky? Probably.
Fun? You've got no idea.
Our most recent theme night was breakfast. You name it we had it. Bacon, sausage, hash browns, biscuits and gravy, waffles, cinnamon rolls for dessert, and this...
THE best breakfast casserole I've ever had.
I begged my best friend who brought it for the recipe that I could share with you all today and she graciously obliged. This is the only picture I have to share because frankly, we devoured it faster than I could snap. Some of the ingredients sound like they may not belong in a breakfast dish-but just trust me. The cornbread gives it a nice "crust", the cream corn a delicious sweet undertone, and the gooey cheese? Just yes.
-1 lb Ground Beef
1 lb Sausage (hot, if you like it spicy)
1 can Cream-style Corn (2 cups)
1/4 to 1/2 diced onion
2 boxes Jiffy Cornbread mix
1 1/3 cup Milk
4 Eggs
1 lb Velveeta Cheese
Jalapeños (optional)
Brown hamburger, sausage, and onion
Mix cornbread, milk, eggs, and corn in a mixing bowl
Spray a 13 x 9 casserole dish.
Pour 1/2 cornbread mixture into pan, add hamburger & sausage, then cover with slices of velveeta cheese, pour remaining cornbread mixture over cheese.
Bake at 425 degrees for 30 min.
