Hi friends and welcome to another Tasty Tuesday! I'm so glad you're here.
Is it just me, or does it seem a little unfair that the same time that most of us are trying to focus on getting a little healthier is the same time that it's cold and messy outside and we just want to stay inside and just eat?
Anyone else?
Today I've got the perfect solution. A comfort food at heart with the ease of the slow cooker and packed full of veggies.
This recipe was originally intended for just veggies, no meat. But sometimes we throw in ground turkey as well, just make sure it's already cooked before you put it in the slow cooker. Here's what you'll need….
-1 cup carrot, chopped or sliced
-1/2 cup celery, chopped
-1 yellow onion, diced
-1 cup yellow squash
-1 cup zucchini (not pictured due to an apparent zucchini shortage in my area)
-1 (8 oz.) tomato sauce
-3 cups V8 juice
-2 (15 oz.) black beans, rinsed and drained
-2 (14.5 oz.) diced tomatoes, undrained
-1 cup corn, drained (or if you like corn like my family-we use the whole can)
-2 Tablespoons taco seasoning
Begin by sautéing the carrots, celery, and onion in a little olive oil until tender and translucent, about 10 minutes. Then add the squash (and zucchini) and seasoning and sauté for another 5 mintues.
While that's going combine the tomato sauce, V8 juice, and diced tomatoes in the bottom of your slow cooker.
Then add all the ingredients to the tomato mixture in the slow cooker and mix together.
Cook on high for 8 hours or on low for 3-4 hours. Then get ready to dive into a delicious and healthy bowl of chili!
