Hi friends and welcome to another Tasty Tuesday! I'm so glad to have you! Also, a quick apology-I accidentally closed the party early last week and I did not mean to! Once I realized I had done it I didn't know how to fix it. I know that some of you join us later in the week and I hate I missed you last week! Sorry about that!!
Today we are talking sweet potatoes. The Mr. loves them. I love them with yummy, melty, gooey butter and brown sugar and cinnamon.
Can you even call it a vegetable like that?
So in being healthier and wanting to incorporate sweet potatoes for the Mr. but wanting to still be able to classify them as a vegetable, I had to get creative. This chip is the perfect solution. It's healthy, baked, and has a slight sweet undertone to it. Bake up a big batch of them and munch on them for days-if they last that long!
Here's what you'll need…
(no amounts as it will just vary depending on how much you want to make)
Sweet Potatoes
Extra Virgin Olive Oil
Your favorite spices (I used Lawry's Seasoned Salt and Salt & Pepper)
Begin by washing and peeling the potatoes. You definitely don't have to peel the potatoes, I decided to peel some of it and leave the rest. Then slice in very thin slices, about 1/16th of an inch if you're using a mandolin slicer (which I highly recommend for this). Drizzle with olive oil until all the slices are just lightly coated. Then add in the seasonings and toss together.
Then take a baking pan and top it with a wire rack and spread out the slices on it. This allows both sides of the chips to crisp up nicely. Bake at 275 for 1 hour, flipping halfway through.
