I love taco soup of all kinds. In fact, in college I worked as a hostess at a fancy tea room and every time the cook made taco soup, they sent me home with any leftovers on the premises. Taco soup and I go way back. But none of them compare with the one I'm sharing today. This one has been my favorite go-to for a few years now and it dawned on me this weekend I had never shared it with you all! It could not be easier or yummier, let's get started!!!
Here's what you'll need…
1 can tomato sauce
1 can rotel
1 can corn
1 can black beans
1 can kidney beans
1 green pepper
1 packet of taco seasoning
1/4 cup favorite salsa
Begin by browning the ground round with the chopped onion and pepper, then add the taco seasoning. Then simply dump in everything else (I sometimes will wash out the tomato sauce can with about half a can of water if I think it needs more broth) and bring to a low boil. Let it simmer for about 20 minutes. At this point it's up to you. The soup is ready to eat and enjoy! However, if you're not quite ready to eat yet pour this up in your slow cooker and put it on low for a few hours. The longer it goes the better the flavor!! I love to make this in the late afternoon before the Mr. gets home from work and then dinner is ready whenever we get hungry!
