Hi friends, welcome to another Tasty Tuesday! Thanks for coming by!
We've reached the point in the Winter where "snow" is a fighting word and we're all afraid to check the weather.
So I'm doing my part to bring some fresh-citrus-sunshiney-goodness (say that 5 times fast) into our world today. Let's jump right in! Here's what you'll need…
-1 lemon cake mix
-2 eggs
-1 8 oz. cream cheese
-1/2 cup oil
-1/3 cup sugar
-1 teaspoon lemon juice
Start by combining the cake mix, 1 egg, and oil until crumbly. Set aside 1 cup of it.
Press this into a 9x13 baking dish, ungreased, and bake at 350 for 15 minutes.
While that's going beat together the cream cheese, 1 egg, sugar, and lemon juice until smooth. When the crust comes out of the oven, pour this mixture on top.
Now take the reserved 1 cup of crumb mixture and break it up over the batter. Put this back in the 350 degree oven for 15-20 minutes.
Allow to cool completely and serve!
