Tasty Tuesday Chocolate Chip Muffins & Recipe Link Up

Hi friends and welcome to another Tasty Tuesday! Thanks for coming by!

I've spoken often of my love for my casseroles, but I don't think I've ever mentioned how much I adore muffins. They are an easy breakfast to grab, yet you can take them to a brunch and look like a fancy-pants. I love making a big batch of them at the beginning of the week and pairing them with some fruit for breakfasts during the week, or even a little sweet something in the afternoon.

Blueberry, banana, chocolate, apple-I don't discriminate. I just love muffins.

So when I found out I was having to cut gluten out I was devastated to think of life with no muffins! But this recipe saved the day. If you aren't gluten free, feel free to substitute with any all-purpose flour. This is also a perfect "base" muffin recipe that can be easily turned into a banana, strawberry, or any kind of muffin you desire!

Here's what you'll need...

2 and 1/4 cups all purpose flour

1/2 cup brown sugar

1/2 cup sugar

1 Tablespoon baking powder

1/4 teaspoon baking soda

Pinch of salt

2 eggs

1 cup buttermilk

1/2 cup oil

1 Tablespoon vanilla extract

Chocolate chips

Start by simply combining the dry ingredients.

Then combine the wet ingredients and add them to the dry mixture.

Now fold in your chocolate chips.

Fill your cupcake liners about 2/3 full and bake at 375 for 25-27 minutes.

Get ready to enjoy!

The God in the Storm

I have lived in Oklahoma my entire life, but this time of year always rattles my nerves. Storm season is alive and well for our neck of the world and it is a battle to not get sucked into the anxiety it can bring. God has always been faithful and will always be, and no storm can shake that truth. However I still feel the struggle every year of what my heart knows and where my mind can wander.

About a week ago we faced our first real threat of severe weather for the season and I found myself fighting the urge to give way to fear all day long. Unfortunately it was a humdinger of a night and the first night of "possible severe weather" quickly turned ugly. I'm honestly ashamed to admit this, but I'll be real-I was a mess. In the middle of that fearful night the Mr. took me into his arms and said something I'll never forget,

Baby, I hate the storms get to you so badly, but I love how you always come to me for comfort and reassurance when they do.

My head was tucked under his chin as he held me in a long embrace and I whispered to God-that's You too isn't it? You hate to see me suffer when the real storms or the storms in life come, but You love that I come to You for refuge when they do. Love that it doesn't take long for me to remember how small I am and how big my needs are and I'm left running back to you with all my might. After all, the winds and the waves still know You're Name.
